The Grilled Cheese

For a sandwich as ooey, gooey, and crispy as a grilled cheese, it’s appropriate that Charlottesville’s standout comes from a place called ooey, gooey, crispy. The years that culinary super couple Carolyn Stromberg Leasure and Zack Leasure spent trying to perfect their favorite sandwich show in the result.

Zack was once Executive Sous Chef of Tail Up Goat, and his kitchen brings a chef’s obsessive attention to detail to a humble grilled cheese. They butter Albemarle Baking Co. sourdough to the edges to ensure uniform color and crispiness. They find the best cheeses they can, drawing on Carolyn’s experience as an award-winning cheesemonger. They use grated cheese, instead of slices, which yields consistent gooiness throughout and faster melting so that the interior is ready at the exact moment the exterior is crisp but not burnt. And, they have determined the precise cooking time to yield maximal results.

Ooey gooey crispy’s rotating menu offers many elaborate versions of a grilled cheese, like the delicious That Rich ‘Wich, with Brie, truffle butter, and potato chips. But, for a comforting classic, it’s hard to beat the simplest. Simply Gruyere is nothing more than melted gruyere and butter. Everything you want in a grilled cheese.
