Five Finds on Friday: Yannick Fayolle

Today’s Five Finds on Friday come from Yannick Fayolle, the former Clifton Inn Executive Chef who now runs two food businesses: Blue Ridge Pizza Co., which he owns with his fiancée Nikki Benedikt, and also Fayolle’s Table, a catering service where Fayolle will bring a fine dining Chef’s Table experience to the comfort of your home. Fayolle’s picks:

1) Noodle Beef Soup at Monsoon Siam. “With the traditional Thai flavors, this has got to be one of my favorite soups. Light yet so flavorful. Top it with some of those amazing green chilis and this is one for the books.”

2) Pork from Mount Rouge Farm. “Can’t put into words how awesome this pork is! Josh Hatter feeds his animals with seasonal veggies, so tender and juicy. I love to smoke the butt roast in our wood fire oven to throw on top of some of our pizzas for Blue Ridge Pizza Co.”

3) Lamb Rogan Josh at Milan. “Only the best thing on the menu! The flavors bring me back to my island life in Mauritius. I really enjoy the blend of spices that complement the lamb . . . and the garlic naan. You can never go wrong with naan! Just an added bonus.”

4)  Prosciutto Pizza at Lampo. “Being in the pizza business myself, I love what these guys over at Lampo do! They have the science behind the dough and flavors down! This is a very classic Italian pizza whose flavors are very well balanced on a perfectly baked crust.”

5) Nitro Coffee at Shenandoah Joe. “Probably one of the greatest inventions of all time! The idea of coffee coming-out in the consistency as Guinness beer is probably the best thing every! I am one serious coffee fanatic. I must have my early morning fix of caffeine.”

The Charlottesville 29 Restaurant Auctions brought so many special moments and now continue to bring more. First, there was the extraordinary generosity of the restaurants in creating the experiences to be auctioned, and the vendors who lined up to help. Next was the bidding, which blew away expectations, totaling nearly $80,000 in donations to the Blue Ridge Area Food Bank, enough to provide more than 315,000 meals to the area’s hungry. And now that the auctions have ended come reports from auction winners about their amazing experiences. What a pleasure it is to receive all of these emails, providing vicarious enjoyment of auction winners’ once-in-a-lifetime meals.

Take Milan’s “Dream Feast Around India,” which Randy Huwa won with a donation of $1,000 to the food bank, enough to provide more than 4,000 meals for the area’s hungry. Billed as a “feast showcasing the many different regional cuisines of India, highlighting owner Charanjeet Ghotra’s favorite dishes from each region,” the family-style meal was “to include Ghotra’s regional favorites from the regular menu, plus some off-menu surprises. With plenty of wines and beers to accompany the food, it’s an all-inclusive Dream Feast Around India.”

Huwa and his guests had their feast Tuesday night. And, from his email to Ghotra after the meal, it is clear that is was special. Also below is the menu which, at Huwa’s request, was vegetarian.

I really cannot find the words to express my appreciation and gratitude for the EXTRAORDINARY dinner that you presented for us last evening. The menu was outstanding; each and every dish was terrific … and you and your great staff were so accommodating to the special diets of our group.

My wife and I are frequent diners at Milan — we love your food! — and I came into last night with high expectations.  Those expectations were SHATTERED.  Truly a memorable evening.

Here is your chance to experience Milan like you never have experienced it before, while helping to feed the area’s hungry. It’s The Charlottesville 29 Restaurant Auctions, presented by McGuireWoods. Along with all of the other restaurants in The Charlottesville 29, Milan has created a signature experience available to whoever pledges the highest donation to The Blue Ridge Area Food Bank. Milan is generously donating the entire experience, which means the winning bid goes directly to the food bank. Each dollar donated is enough to provide four meals to the area’s hungry. So, a winning bid of, say, $1,000 would mean not just a wonderful meal for the winner and their guests, but also 4,000 more meals for the area’s hungry.

Born and raised in India, Milan chef-owner Charanjeet Ghotra has been in the restaurant industry ever since he came to the United States. Unlike many Indian restaurants in the United States, though, the food he serves at Milan is not limited to the ubiquitous cuisine of his native Punjab, but instead draws on influences from throughout India. For the auction winner and nine guests, Ghotra will create a feast showcasing the many different regional cuisines of India, highlighting his favorite dishes from each region. The wide-ranging, family-style journey around India will include Ghotra’s regional favorites from the regular menu, plus some off-menu surprises. With plenty of wines and beers to accompany the food, it’s an all-inclusive Dream Feast Around India.

Note: The winner will schedule the event at a mutually convenient time for Milan.
