Five Finds on Friday: Chris Collins

Today’s Five Finds on Friday come from ACAC trainer Chris Collins. As the New Year brings new fitness goals, few are better to help meet them than Collins. If you’ve ever been at ACAC and noticed a buzz of energy near the exercise class room, chances are Collins is the source. His training is so inspiring that he has earned a following of Collin-istas. Collins also has a passion for food. Collins’ picks:

“Might not be the healthiest picks, but I usually order steak when I go out, especially during colder months when I cannot grill it outside at home. I cook a lot at home, where I keep things basic and try to stick to single ingredient foods. I am spoiled too because I get a loaf of homemade sourdough each week from my mom.  My vices other than my mom’s bread are popcorn and avocado-oil lime tortilla chips.”

1) Carne Asada at MAS Tapas. “Racion portion, because there’s never enough to go around. I can eat this as an entree, but it is meant to be shared. In a group of four or more, if this dish comes too early while dining, you might order it again for dessert.”

2) Prime NY Strip with the Golden Potatoes, Brussels Sprouts and Broccolini at Black Cow Chop House. “Go with a small group and come hungry.”

3) Two orders of the Polpettine Panuozzo at Lampo. “Cut each in half – four halves. When I’m with another person, I eat three halves in house and share the remaining half or take it home. I am sensitive to lactose, but this sandwich is that good and worth it.”

4) Hanger Steak and a Orange Spice Hot Toddy at Oakhart Social. “On a cold winter evening, after dry January that is. Or, order the cocktail virgin.”

5) Coliflor at Conmole. “One of the tastiest small dishes in town. Pan seared cauliflower and farm eggs in mole verde.”

Five Finds on Friday: Rachel Gendreau

Today’s Five Finds on Friday come from Rachel Gendreau, of Crush Pad, Luce, and Bizou. A Certified Sommelier, Gendreau these days is most often at Crush Pad, where if you walk in and ask her to choose a glass, a bottle, or even a case, you will walk out happy. “I am blessed to eat and drink exceptionally well in my line of work with Vincent & Co., and so this was a major challenge,” said Gendreau. “I went with the dishes I returned to most often this past year, the things that make my heart happy and were always enjoyed in beloved company.” Gendreau’s picks:

1) Skip Burger at Blue Moon Diner. “Somehow both tragically hip yet endlessly welcoming, everything about the Blue Moon vibe is immaculate, and Laura is truly the coolest. I’ve been coming religiously for the Skip Burger since I was in college, a slightly runny egg, perfectly medium rare patty, crisp LTO, bacon, melty cheddar, side of fries (dipped in mayo, because I’m a monster), and invariably accompanied by a bottle of the house bubbles to share. THE breakfast burger to cure anything that ails ya.”

2) Boat Noodles at Thai Cuisine & Noodle House. “Thai Cuisine is my go-to Thai spot for sure, and while Jay and his crew always deliver exceptional pho and curries, I’m a Boat Noodle girl for life. Something about that dark, rich broth and the chew of the noodles, tons of cilantro and scallions, bulked up with an extra portion of Gai Lai. Oh baby.”

3) Celery Salad at Birdhouse. “I am lucky to live in a killer food neighborhood, and having this gem within walking distance is a beautiful and dangerous thing. Liz’s expertly curated low-intervention wine list is a major draw, as is the achingly perfect chicken and sides the kitchen turns out, but nothing has my heart quite like the celery salad – a light, refreshing, texturally perfect foil to all of the schmaltzy goodness on the table.”

4) French Onion Croissant at Cou Cou Rachou. “Another neighborhood delight, and one with which I share a name. My daughters and I allow ourselves carte blanche and always leave much poorer, but with a box full of sweet and savory masterpieces. We are fond of the quiche-lets, the caneles, the sourdough, the giant cookies, and whatever mousse is in the fridge upon arrival, but the French Onion Croissant rocks our world every single time. Get two, trust us.”

5) Lobster Roll and Oysters at Public Fish & Oyster. “Nobody does happy hour quite like Public – snag a couple of early barstools, and let John make you a pristine Negroni. Order a dozen dealer’s choice bivalves, always expertly shucked, and work your way through them while waiting for a generously portioned lobster roll (Maine-style or bust, fight me). Add a glass of sharp, saline Muscadet, and you’ll probably hear me purring from West Main Street.”

Five Finds on Friday: Lora Henderson Smith

It’s a Thanksgiving tradition for a reader selected at random to participate in Five Finds on Friday, and, from the hundreds of entrants, this year’s winner is Dr. Lora Henderson Smith. An Assistant Professor at UVa’s School of Education and Human Development, Smith came to Charlottesville a decade ago as a grad student and has been on the hunt for delicious and affordable food ever since. Now with a three year old daughter, it’s often takeout, but she still enjoys seeking out great food around town. Her picks in the order she discovered them:

1) Hibachi Combination Chicken and Shrimp from Kabuto. “Bonus points for the super reasonably priced lunch special.”

2) Kao Pad Ka Pow with Chicken from Monsoon Siam. “It’s not on their menu any more, but occasionally they’ll still make it. I can always get it at Pineapples.”

3) Shrimp Casserole Platter from Sultan Kebab. “My husband first introduced me to this dish. Our household loves it.”

4) Hands On Breakfast with Chicken from Guajiros. “The cilantro aioli is to die for. I think this is currently my favorite meal in Charlottesville.”

5) “Burfday Muun Rox” Cake Tin from Caked Up Cville. “Because, just one cupcake isn’t enough, but a dozen is too much for my family of 3. The cake tins are perfect.”
